Chicken curry & Butternut squash. Recipe send Jimmy Pakpahan
This recipe very simple to cook and perfect meals during the winter seasons.
1,2kg Chicken Legs
1 Butternut squash (size medium)
1 Red onion- peeled and chooped
10 Cardamon seeds
6 Fresh green chilli fingers
1 small ginger
2 tsp olive oil
1 1/2 tsp Tumeric
1 tsp ground coriander
1 Tin coconut milk
1/4 cold water
Salt & Pepper
Heat the oil in press cooker pan,fry the chicken until golden brown. Add the
spices and mix well,stir-fry about 10-15 minutes add the water ,cover and
simmer for 20 minutes, add the remained ingredients Butternut squash and
coconut milk – cover and simmer further 20 minutes until soft and tender
.Don’t forget to put some salt and pepper according to your taste.
Garnish: with slices of limes
Served with boiled rice or bread
